Over the past decade, Brock has reportedly piloted a cargo helicopter, run a wine bar in Lisbon, served two non-consecutive tours in something he won't specify, attended Le Cordon Bleu (the original campus, he is firm on this), and briefly held a stake in a Formula 2 racing team. Where are you from originally?

Originally? That word is doing a lot of work. My father was a logistics consultant, so we moved every couple of years. Singapore for a stretch. Cape Cod. There was a year in Buenos Aires that I think about often.

How did you get into modeling?

After I sold the wine bar in Lisbon, I had some time. A casting director found me in Lake Como. Or — no, Mykonos. It was Mykonos. The Como story was a different guy.

What's your educational background?

Culinary school in Paris, the real one. Some economics coursework I never finished. A semester at a Swiss hotel program I won't name because they get touchy.

What kinds of bookings suit you best?

Anything. Truly. I've been a date to a Sotheby's auction, a plus-one to a Tuscan wedding, and a cigar-room companion for a retired federal judge. I read every room within ninety seconds. It's a gift.

What's the truest thing about you?

That I don't really go in for the question 'true.' The work I do isn't about facts. It's about whether the client felt understood. They always do.
